The narrowing gathers aroma in the space above the coffee; the open lip brings it to the nose and sets how the coffee meets the palate. A light pour — around \u003cstrong\u003e100ml\u003c\/strong\u003e — leaves room to swirl and nose the coffee the way you would when tasting, then refill from the server as it cools.
